Spicy pumpkin, coconut & red lentil soup


  • 300 grams diced pumpkin
  • 80 grams red lentils
  • 1 large onion
  • 2 sticks of celery finely diced
  • 100 grams finely grated ginger
  • 4 cloves of finely grated garlic
  • 1300 ml vegetable stock
  • 2x 400 grams coconut milk
  • 3 tbsp toasted cumin seeds
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamon
  • 4 tbsp lemon juice
  • sea salt & black pepper to taste
  • hemp seeds & sunflower seeds to sprinkle on top







1. Place a large saucepan over medium heat. Add oil, then garlic and cook for 1 min. Add ginger, cook for another minute. Add onion and celery, cover and sauté until soft and translucent. (about 10 mins.)

2. Add spices and cook for 1 min. Rinse lentils under cold water and add then stir in pumpkin pieces and add vegetable stock.

3. Reduce heat and simmer for 30 mins until pumpkin and lentils are soft.

4. Remove from heat, purée until smooth. Add coconut milk and simmer stirring gently.

5. Add lemon juice and seasoning to taste. Sprinkle with hemp seeds and sunflower seeds.

I have decided that it is time to get some professional photos on my site so this weekend I will be creating some wonderful meals with these colourful ingredients. Just looking at them gives me energy so if you want a lift up look no further!

Simple seasonal produce can be just as good,  if not better than long elaborate dishes and tomorrow I will be creating magic ready for my very first photo shoot. I have juices, mixed salads, soups and roasted veggies on my menu so watch this space and follow me as I take you on a journey to healthy mindful eating.

Juicing for 15 days!

Wow, that’s it I just completed my latest 15 day juice fast with over 50 people from all over the world!

How do I feel? Amazing! I feel on top of the world! Juicing gives me so much energy and clarity, as well as weight loss, it gives me confidence and a positive mindset to move forwards into healthy eating …

New beginnings!

Today I am feeling tired and my body is aching all over as the last two weeks have been spent moving house.

While it gave me a real thrill to move into an empty space, with its light and shadows and openness we have now actually moved it with all our boxes and I am feeling weighed down again. Our move was going really smoothly then we rented Robin’s Nest and suddenly everything had to be done NOW instead of over time. It was a mad rush to get all our belonging moved out of one house and into the next and the result is aching backs, legs and heads! Argh!

I was feeling over whelmed just a couple of days ago thinking I would never be ready for today but we worked hard and miracles happen…

This was my view this morning looking up to Fox-Amphoux and I feel so lucky to be alive! This morning my very first guests arrive in Robin’s Nest and I feel excited and a little nervous.

I know now from experience that it is often in moments of turmoil that great new beginning develop and although I am tired, sitting here surrounded by boxes to unpack, with no kitchen yet so no food planning and late for my next deadline,  I somehow feel at peace with myself.

Maybe it’s because I am sitting here in paradise… surrounded by trees with the wind whistling through the leaves and the sun rising above the alpes. Maybe it’s because Eric (whom I fondly call BB) has begun working again on our new kitchen. Maybe it’s because my eldest son had his first flight yesterday as BA Staff, or my youngest son’s visit to help with our move or maybe because my Mum arrives in a couple of days…

Whatever it is I can see the light and I am feeling positive that this is just the beginning all over again …

Ballet Dancer Nutrition Facts

For as long as I remember I have always danced…

As a kid I’d finish school and start my ballet classes. Nothing could keep me away from the dance studio that I used to go to. Wow, did we work! It was demanding and strenuous, physically and mentally. I idoled my two dance teachers and would try my best to do exactly what they told me. It was a world of discipline. Even then it was hard work and it took a tremendous effort to successfully execute the movements. Day after day I would strive for perfection. Getting one word of praise from my teacher was like gold- dust! It wasn’t easy! Then after years of trying my best one day it all clicked into place and from that day on I could feel the movement. I just got it!

I knew where my body was in space, where my arm should be, my eye focus and my attitude. I don’t remember how old I was but I remember feeling thrilled, on top of the world and I just knew that this was what I would do for the rest of my life!




Fast forward …My dream came true, I became a dancer and danced my way around the globe.

Sometimes it was classical ballet, sometimes jazz or contemporary, sometimes tap dance.








Whatever it was I was happy. The music, the lights, the costumes, I loved it all and the Stage became my world!

When I eventually became interested in Nutrition I was already in my late 40’s but I was still very much aware of my body.

I found this photo and thought how appropriate it was.  How it relates to so many people struggling with weight issues… let’s see how to deal with it …91% determination and 0% excuses , striving for your passion through sweat and tears and finding your mental attitude to make it happen! Creating that hustle of activity and movement and when you succeed remaining professional at all times.

These days as a nutrion and lifestyle coach, the very same golden rules apply and it strikes me how similar they are. The discipline is not rigid, it gives you freedom, to create, to be who you really are, the person you were always destined to be …

Of course life brings ups and downs but there is one thing constant in your life and it is YOU.

Never ever compromise your dreams, life will get in the way but never lose your vision. Go get what is out there waiting for you! It has always been yours…

You really just had to find your way…

Do you trust me?

In this day and age how do we know when we can trust someone?

I am a stranger, you don’t know me, why would you want to come to spend time and money on my retreat? What is in it for you?

Well everything really but until you trust me and build a relationship with me nothing will happen!


People often tell me I am passionate and yes this does help to ignite a desire in others but building a relationship is what will encourage you to come and visit me!

So how did I get started? …..Well, I started on facebook (even though I had resisted it for months) in fact, once I joined I loved it!

I live overseas so my family were all spread far away and I managed to reunite with cousins and friends and facebook brought us all together again.

My journey to better health started with juicing which changed my mind-set then moved on to a craving to eat healthy food.  I created one then another then another group and all of my facebook groups are successful!


I love the community of supporting people all aiming to improve their health through healthy eating and exercising but I was dubious about creating my own website.

What I found was that it was these people who were following me on facebook, who already trusted me, who followed me to my new website and this was a huge achievement for me.

Spring onion glory! Look what has grown in my garden! 😍

Look at this amazing spring onion which we pulled out of the garden today! I couldn’t believe how long it was, I think the bulb should have been a bit bigger but wow this was a long one!

Put together with a fresh crispy salad and some of these gorgeous tomatoes …
